WITH WARM CHILI–LIME MANGO RELISH

The Headnote

This borrows the syrniki idea — cottage cheese as the structural base of a pancake — and steers it toward the Caribbean with lime zest, toasted coconut, and a warm fruit relish built on chili and acid rather than sugar. The result is a pancake that reads as breakfast but behaves more like a savory-leaning protein plate with tropical overtones.

The technique matters here: minimal flour keeps the pancakes tender and high in protein, while a brief batter rest lets the oat flour hydrate so the texture holds together without getting gummy. Low-fat cottage cheese keeps the protein density high while cutting saturated fat — a practical choice for anyone managing intake on GLP-1 medications. The mango relish stays small and intentional — portion-controlled, acid-balanced with lime and a whisper of chili warmth rather than aggressive heat. No syrup overload. Everything stays in proportion.

Ingredients

Pancakes

  • 1 cup (227g) low-fat (2%) cottage cheese, drained
  • 2 large eggs
  • 3 tablespoons (15g) oat flour
  • ¼ teaspoon baking powder
  • 2 tablespoons coconut oil, melted
  • 2 drops lemon oil
  • Pinch kosher salt
  • Nonstick cooking spray, for the pan

Warm Chili–Lime Mango Relish

  • ½ cup (80g) finely diced just-ripe mango
  • 1 tablespoon (15ml) fresh lime juice
  • ¼ teaspoon lime zest (or 2 drops yuzu oil)
  • 1 tablespoons light brown sugar, or to taste
  • 1 teaspoons honey, or to taste
  • Small pinch kosher salt
  • 1/4 teaspoon mild chili powder
  • 2 teaspoons rice vinegar

Optional Finish

  • 2 tablespoons (30g) low-fat (2%) Greek yogurt
  • Light sprinkle toasted unsweetened coconut

Method

  1. Make the batter.

Blend 1 cup (227g) low-fat cottage cheese, 2 eggs, 2 tablespoons (15g) oat flour, the zest of 1 lime, and a pinch of salt until mostly smooth but still lightly textured. Let the batter rest 5 minutes so the oat flour hydrates.

  1. Bloom the chili.

In a small bowl, stir 1 tablespoon (15ml) lime juice and ⅛ teaspoon chili powder together. Let sit 30 seconds to bloom the spice.

  1. Prepare the relish.

Gently fold the bloomed chili–lime mixture into ½ cup (80g) diced mango along with ¼ teaspoon lime zest and a small pinch of salt. Taste. If the mango is very sweet, add a tiny splash of rice vinegar to sharpen it. Set aside.

  1. Cook the pancakes.

Heat a nonstick skillet over medium-low. Coat lightly with cooking spray. Spoon small rounds, about 3 inches wide. Cook 3–4 minutes per side until golden and set through. Keep heat moderate so they cook evenly. Re-spray between batches if needed.

  1. Plate intentionally.

Serve 2–3 pancakes per person. Top with a modest spoonful of mango relish. Add a small dollop of low-fat Greek yogurt if desired. Finish with toasted coconut and a light squeeze of lime.

Chef’s Notes (Read Before You Cook)

  • High protein from cottage cheese and eggs with minimal added flour makes these more filling than they look. Start small and pause before going back for more.
  • Low-fat (2%) cottage cheese performs well here. The eggs provide enough fat and binding to keep the pancakes together. Nonfat cottage cheese will work in a pinch but produces a slightly drier pancake.
  • A nonstick skillet with cooking spray replaces the tablespoon of butter from the original version, cutting roughly 100 calories and 11 grams of fat from the whole recipe without sacrificing browning.
  • The mango portion is deliberate and acid-balanced. The relish is meant to complement, not drown the pancakes.
  • Warm spice (ancho or Kashmiri chili) provides gentle background heat rather than aggressive fire. Adjust to taste, but a light hand works best here.
  • If the mango is very ripe and sweet, the optional rice vinegar splash rebalances the relish and keeps it from reading as dessert.
  • Keep skillet heat at medium-low. These pancakes are thicker and wetter than standard pancakes and need time to set through without burning the exterior.
